As mentioned, there's usually more selection than that now, including eggs, fried rice, porridge, soups, instant noodles, and sometimes pizza. Despite that selection, we usually ended up having daal bhat at least once a day. Each place makes it a bit differently, so we didn't mind it. Also, unlike the other dishes, daal bhat is guaranteed to fill you up (since they refill your plate).
You may also want to bring a stash of fruit to start the hike, and purchase some more when you can find it along the way.
