Suggestions for rural Belgium?

We're planning a late summer / early fall trip to The Netherlands and Belgium. We will certainly spend time in Amsterdam and Brussels but would also like to spend some time in a more rural area of the Lowlands. Any suggestions for someplace to base ourselves for several days that will be less urban and off the beaten track? History, hiking and quiet are pluses but access to local sites and good eating are also desirable.

I presume you would be travelling by car? Because you can't easily get to little villages in the Ardennes without one. If not, I would suggest you base yourself in e.g. Dinant (http://www.eupedia.com/belgium/dinant.shtml) or perhaps Spa (http://www.eupedia.com/belgium/spa.shtml) from which TEC buses serve smaller places.

My favourite is the 'vallée de la Molignée' a small river in early ardennes and the castle at Bouillon (where Godefroid de Bouillon came from before he took Jerusalem).
