Lucca, Siena, San Gimignano, Volterra, Montepulciano, Montalcino, Barga ....

You need to read a guide book to decide which of the many places would be interesting to you.

Don't forget the small hilltop town of Fiesole, just a twenty minute bus ride from Florence, You take the No. 7 bus from Piazza San Marco.

I would say that the suggestions of sydneynick above would fill your seven days in/about Tuscany. Lucca is a charmer!

Michelin Green Guide and/or Cadogan Guide Tuscany would be good ones to consult.
