Well, it depends a lot on your budget and the area you want to know, but if you like coastal areas, you'll find lovely hotels and nice rural cottages and inns.
A good hotel, in the mid range of prices, could be the Rio Azor Hotel in Palmeira (Ribeira). It has a pool and its is placed over a small beach in a small nice town. In that same area, La Rectoria de Artes, is another nice option. A little more expensive, but close to Corrubedo Natural Park with one of the longest beaches in Galicia.
If you are looking for incredible views, El Semáforo Hotel (Finisterre) is a great option. It is a small hotel (only 7 rooms and no restaurant) in the old lighthouse keeper house, just over the cliffs. It is a little expensive (70-80 euros a room) but the location deserves it.
If you want to stay at a city, maybe Hotel Peregrino, in Santiago is a good option. Is not the best hotel in town, but it has a big pool, is easy to find by car and it is 15 minutes walking from the cathedral. Or an hotel at A Coruña, near the beach (you have a wide selection there depending on the dates and the rates).
You know, you have a lot of options, from a Palace over the cliffs to small rural houses, from crowded tourist towns to small villages. If you want more specific advices let me know.

I would suggest something a little more out of the ordinary. Get out the Pousada in Asperelo. It is located in a small town very close to the Portuguese border and is like a step out of time. The Pousad accomodations are very nice, views sepctacular, food unblievable and even for one day it will be most memrable. The Pousada also has a swimming pool and is VERY clean. Again, it will be something unforgettable, located near the larger town of Entrimo...the owner is Augustin, tell him Karin from the US recommended it!
