Deposit/ guarantee for staying in a gite

We are internet booking a gite in Provence, and the owner has asked us to sign a contract in which we agree to put down 1000 Euros for our stay (which will cost 700 euros) and the balance is returned at the end. Is this a normal practice? The owner seems reputable and is not expecting the money until we arrive, they don't seem to want a Visa deposit.

Any advice.

It is not unusual for a gite owner (or apartment owner) to want a security deposit of E300 (or more, or less) to cover the possibility that the renter will cause damage. I have never had any problem in getting this deposit returned, in cash, as we leave.

yes, I had to do the same for 2 gites I booked for September.

It is not unusual. Gite owners do tend to operate in cash (no money trail, no tax). The logistics can be a problem though. Think about how you will carry and hand over the 1000 euro and check that you get the 300 euro back in cash on departure.
