I have always enjoyed the Bouillabaisse at Boccaccio on rue Massenna, friends have also recommended I try the Bouillabaisse at Cafe du Turin on Place Garibaldi.

Soupe de poisson de roche is the NIce regional fish soup. I personally think that bouillabaisse is better....

I enjoyed the bouillabaisse at Chez Davia in Grimaldi. It didn't make any difference to my enjoyment that it wasn't a local dish.
