11 November, l'Armistice 1918, is a major public holiday in France. It will be the last day of a four day weekend (with Monday being "le pont"), so Paris will be missing many Parisians. Tourism will be working at full force and you will be able to eat and drink, but if you have anything special planned for Tuesday you should check to see if its business as usual.

Yes, all that will be working; normal Saturday, Sunday, Monday hours and service. Just on Tuesday if you have specific plans for a museum, shop, restaurant, etc. you should check to be sure they are open. Retail shops in most areas other than the Marais and St Michel area will probably be closed on Tuesday.
