I think you would be very unlikely to find self catering for less than a week at a time in July - Saturday to Saturday. Keep looking, and someone may have some inside information, but I think you will be more likely to get b&b.

Most Self catering are on 7 days especially at high season if however you leave the booking to a couple of weeks before your trip you might find someware with a cancelation try Shamrock cottages they specialise in country reteats.

Try www.albanne.ie these are apartments that are rented to students during term time but are available during the summer. The look great from outside and I have heard good reports. They are about twenty minutes walk from Sligo town centre, the Clarion village is right beside the Clarion hotel handy if you feel like some company!

i've only done one self catering cottage because i was just dying to spend the week in a thatched cottage...it was lovely but they would only rent it for a week at a time...you could pay the full weeks rent and stay 3 days if you wanted but of course i didn't want to do that....lol....
