We arrive at Cancun at 720pm...then have to get our stuff, get the shuttle and all that. By the time we get to the resort, it's gonna be 9pm or so...then we have to get checked in.

I will be STARVING by this point.

What time do the restaurants close and is the 24hr room service at all decent, so I can get some grub at that late hour?

ok...I answered my own question. (Palace website.....duh)

Most close at 11 or midnite, but what about that room service menu? Any good?

The room service was pretty limited but adequate. They had burgers, a chicken dish, some sandwiches (I think grilled cheese) and some seafood as well as desert. I think you'll be able to find something you like. My advice would be to order a couple of dishes just in case you don't like your first choice.
