If you stay at the Gran Bahia Principe Tulum can you eat at Dolce Vita and go to the disco on the Akumal side????? Any info would be much appreciated.

Yes you can make reservations at the Dolce Vita. The disco is not on the Akumal side it is at the Hacienda. Tulum too has no disco on that side, the disco is at the Hacienda. There is entertainment on all three sides however. The only thing you cannot use is the Riviera Restaurant on the Akumal side and the Arlequin ala carte. Everything else you should be able to use.
