Blanchards Beach Shack for lunch. Rent chairs for $3.00 and you can snorkel around the cliff at Malli's.
Dune Preserve - a must experience.

We were told the best snorkeling on the West End was right there at the Meads Bay beach section of Viceroy's property, and my husband really enjoyed it. If you love to snorkel, you might want to head to Shoal Bay East and/or in front of Gwen's down that way.
Rent a car...some of the best restaurants are not nearby in walking distance. We always rent from Ronnie Bryan/Island Car Rentals.
Do a search in the box above your original post (if you haven't already) for Viceroy trip reports and you'll find lots of feedback from others.
Don't be afraid to ask if there is something you want but don't see on the menu at Viceroy, I overheard and experienced their staff making things off script.
If you can walk far distances, then I'd recommend for dinners: Mangos (fresh seafood) and Picante (average Mexican, but nice for a more relaxed meal on the wallet). For lunch Blanchards Beach Shack.
Rent a car and also experience for dinner Veya (our favorite), SandBar (great small plates and cocktails), and Trattoria Tramonto (lunch or dinner).
Monday night is the Manager's Sunset Cocktail Party right there at Viceroy's Sunset Lounge.

This will be our second trip to Anguilla. My husband is frequently restless on vacations and likes to be snorkeling all the time, while I like to park it on the beach and read. Last time we split between CJ and Cuisinart and neither had very good snorkeling. Do you know what types./amount of fish your husband saw on Meads Bay? What end/area?
The pool at the spa is amazing...and is almost always empty because nobody realizes its there. They have the best iced tea at the spa too and you can have as much as you want. My wife and I used to just drop in to grab a glass of tea on our way to the beach.
Oh yeah almost forgot if you don't have breakfast included and are just looking to have a cup of coffee or tea they have a great spread of coffee and tea in front of the fitness center.
Snorkeling was just in front of the beach chairs, to the left looking out at the ocean, where it's a little rocky. Not sure what types of fish, but he said twenty or so at a time, he liked it better than at Gwen's, but Anguilla doesn't have "great" snorkeling compared to other places in the Caribbean, but we don't go for the fish! We have friends who do prioritize this and they love the BVI/Tortola for dives and snorkeling.
Looking forward to William's tips next time...we missed checking out the spa and love iced tea on warm days.
