Is lobster available year round or is it seasonal?
Let's call it "luck" vs. "seasonal"... they're always in the water... just depends on the fishing fleets luck...
Anguilla also has something called crawfish, which I havent' seen in the Carribean before. They look like litte carribean lobsters. I was told they are unique to Anguilla. Least expensive at at Uncle Ernies, and I saw them at Elodia beach bar too.
What do they taste like? And how are they prepared?
I did not try them. I saw them on diner's plate at Ernies. The plate was $21. I'm wishing I had as they were more expensive elsewhere.
I'm curious as to what others know about them.
They look just like carribean lobsters (speckled beige, no claws) but smaller.
I think they were steamed as they were whole.
Next time I'll search them out, you should too.
I will definitely try them!
Spiney Lobster is what you'll find on this island. As an earlier post stated they have no claws. They're scrumptious! Crayfish is considered the real delicacy by people who live on the island. Straw Hat has a wonderful crayfish offering on their menu. Here's a link to a dining guide for the island:

Anguilla's lobster is the best lobster I have ever had. I had it at ton's of different restaurants. Blanchard's hands down had the very best. It's prepared very spicy.
