In Brunei you remain in the airport (around 2-3 hours), not a very big place and not much to do, then go back thru security when time to board.

In Dubai you get off the plane over thru security then back to the gate and get on the plane again (one hour).

It is good to have a leg stretch between flights

You would only go thru Immigation and Customs if you were entering the country or maybe if you were changing airlines and you were not able to checked all the way to London at check in.

When you check in at Melbourne, Brunei should be able to allocate you all 3 boarding passes, for Melbourne to Bander Seri Bagwan, Bander Seri Bagwan to Dubai, and Dubai to London.

Your luggage should be tagged to London also

You only need 2 boarding passes since you return to your previous seat after the Dubai stop (make sure you keep hold of your boarding pass when you get off), so don't panic when you aren't given 3!

I've flown with Royal Brunei several times from the UK to Australia and back and had no problems. They make a lot of juice/water runs during the flight, the entertainment usually has a good range of films, TV shows and games on offer and the staff have always been extremely pleasant and helpful.
