This is a lovely, low key and relaxed place to eat. Sitting outside is a delightful experience, even when the wind blows! Inside is a bit more diner like.
Food is simple and well prepared. The tuna carpaccio and crab cocktail cold appetizers are as fresh as can be..." and delightfully light. The creole dishes can be a bit spicy, but never offensively so. Many of the special are based on the owner's family recipes. I had the duck two ways, which was so very good. But a good friend said he had a duck stuffed rolled cabbage the next night, based on owner's mother's recipe, and made me quite jealous. I hope to have it next year!
The wine list is quite nice and inexpensive (at least to this New Yorker). A crisp and cold Quincy is perfect with most non-meat dishes.
For dessert I have a weakness for the simple, but perfectly prepared crème brûlée.

"Le Sand is a "new " (second year open) beach on Nettle Bay in St. Martin. The restaurant is very chic with very good food. The bar is well-stocked, far beyond the usual rum punch and pina coladas of most beach bars. Good service, friendly people. Not bad for a beach bar!
Be aware that the sand here is not the soft white sand you find on most of the island. This is more of a crushed shell beach. Small beach, lots of surf, nice and quiet.

The foie gras was absolute perfection, as were the escargots and the goat cheese puff pastry. Maybe we were just too full by the time our main courses came, but the appetizers were definitely the best part. I hear they also have a great pastry chef but we were too full to enjoy any of his creations. Would definitely recommend if you're in the area.
