A must visit for anyone going through cisternino. This rosticceria is known for you being able to choose meat at a butcher's display and subsequently choosing antipasti at the table. Maybe because we were there in September, and therefor not many tourists, we were the only foreigners between big Italian families. It's a paradise for carnivores! Rosticceria is a specialty in this small but lovely town, and this is an excellent place to sample it. The meats were extremely well prepared. I'd also recommend the starters of donkey in a red sauce and the mortadella, both specialties of the house. Surprisingly budget-friendly given the quality of the meat.

We weren't really that hungry when we went there but as soon we saw all the delicious stuff we just had to get all the recommendations of the waiters. But the best were the starters, where you get six different local specialities and of course the salsiccia straight from the butcher. Always worth a visit.

Eating meat and choosing by the butcher is typical for Cisternino. So you have to do this. The taste of the meat is special. In the restaurant there is a kind of smell like in an abbatoir. If you like top quality meat cooked and served straight from the butcher, this is the place for you! Just point at what you want unless your Italian is good enough to discuss the various meat with the butcher, then it will be weighed , cooked to your liking and served at your table in the adjacent restaurant. Remember to book very far in advance. We booked 5 days in advance but it was worth it.
