Good food and good drinks

Cool place with outside seating options. The service was good but was a little slow for the amount of people that were there. I will eat here again.

We were looking at different resturants, stopping, looking at atmosphere, menu and talking to staff. We happened upon Casa Chimayo. I would not call this fine dining but it is definitely authentic family-style mexican. The setting is historic and super comfortable, if a little on the shabby side (which I like). Although Casa Chimayo has a few unusual things on its menu, it is not terribly memorable Mexican food. We tried the interesting things, which were okay: enchiladas made with calabacitas (squash) and lamb chicharones (fried lamb fat). The chicarones definitely had a lamb flavor. I literally stumbled upon this place as it was near my hotel. Upon entering I was greeted warmly and seated quickly. I had a stuffed pepper of sorts and a grilled pineapple/cilantro margarita. We went to this restaurant on our hotel's recommendation and we also had a 10% discount card. Moderately priced and very casual. People are now catching on, as it was busy on a Wednesday evening. The chicken with mole was a flavorful airline breast. Great food with many items to choose. The artisan crafted Guacamole is hug yourself yummy and the blue corn enchilada (shredded chicken) was filling and good. Adrian was an excellent waiter.
