Description: Chef-owned Galisteo Bistro features innovative international cuisine known for its open kitchen, quality menu offerings, and attentive service in a casual, downtown setting. Specialties include Braised Lambshanks, Seafood Pasta, Chicken Braciole and Crabcakes ala Flamenca, along with an extensive list of tapas, cheese flights, salad courses, daily specials, seasonal entrees, and homemade desserts. Whenever possible, ingredients are fresh and organic. “The owners have focused intently on all aspects of the operation. The emphasis here is on good food and conviviality in a welcoming, unpretentious atmosphere.” –Anne Hillerman, Journal Santa Fe   “I admire a restaurateur who says, Hey, I want to cook the foods I love, like a musician who says, I want to play the music I enjoy. Chef would have made a great conductor; his orchestra of a staff is playing lovely food in perfect harmony. If music be the food of love-long may Galisteo Bistro play on.” –John Vollertsen, Santa Fean

While the ambience was certainly charming and our initial greeting was pleasant, our overall dining experience left a bad taste in our mouth. We ordered a dinner salad and it was so miniscule that we asked for more greens. The young server said that was not possible, while the older server finally came over and replaced it: how absurd! An... More

I went to dinner a Galisteo with my daughter. We shared a salad and a variety of tapas as well as a couple of glasses of wine. They have a nice variety of tapas (as well as mains) and most of them were delicious.

This restaurant is very small so you definitely want and need a reservation. I saw the reviews about being seated at a cramped table and too close to other diners, and I have to agree having seen the set of three tables to which these reviewers were likely referring. I would specifically ask that you not be seated against the... More

We ate at Galisteo Bistro on our recent trip to Santa Fe. The decor was elegant, the service was professional, and the food was delicious. The mussel appetizer (one of the specials) was fantastic! The chipotle shrimp appetizer was also excellent. I had the Crabcakes Casalinga for my main, and I really enjoyed it. My husband ordered the Traditional Sicilian... More

If you want an escape from choosing either the red or green chile, try this restaurant. My daughter who does not like scallops asked the waiter if she could have only shrimp in the shrimp and scallop pasta and they had no problem coming up with an excellent "scallop free" dish. All of us raved about our meals. The chef... More

We recently had dinner at Galisteo Bistrot. Robert and Marge are inhospitable hosts. I ordered Mussels and asked if the were frozen. I was told that they were not frozen. They clearly were frozen and insisted that they were fresh. As a frenchman, born in Brittany,I know my mussels. And, they were frozen. The fact they insisted that they were... More

So refreshing! Wonderful polite service. Everyone owners included pitch in to make your experience amazing. Exceptionally well run. Food and wine selections delicious. Staying at Inn of the Governors really handy. Reservation by mid day recommended.

My husband and I were on a second honeymoon in Santa Fe over the Memorial Day weekend. We had dinner at Galisteo Bistro one night and found it a disappointing experience. We started with the duck liver pate which was just o.k. and the presentation was not very appealing. My husband had the fish special ($27) which was nothing special... More

Right around the corner from Inn of the Governors where we stayed. We arrived without reservations, but they were very gracious, and the food was excellent.

I brought two friends with me this time and we had a great meal all the way around. We were well advised on the wine pairings and the service was impeccable!
