Richards has been in business since 1989 but I only discovered them in 1995. They are MY ABSOLUTE FAVORITE for a number of reasons. Richard's is great and not nearly as well-known as it should be. Richard, the late original owner, wanted to create a healthy Mexican restaurant, so they make everything fresh, use vegetable oil instead of lard and have several vegetarian and Atkins-friendly options. It's still not all THAT healthy (there's tons of fried food, cheese and sour cream), but I guess... more
