Everytime I go to Pike Place, I make a stop at Beecher's. Whether it's just to watch them make the cheese in the window to trying samples and purchasing a few blocks. We came here for lunch and tried the flagship grilled cheese. Sooo good! Bread was super crispy, plenty of tomato and basil and of course the cheese was excellent. If you love grilled cheese, this is the place to go!

Can't go to Seattle and Pike's Market without a trip to Beecher's and a steaming cup of mac and cheese. Nothing like it.

Yep, that's what it's called and that's how it tastes! Tiny shop with few seats. You can watch them processing the cheese for their dishes and for sale. This was across the street from the main level of Pike Place Market.

This popular eatery is one of the busier eateries in Pike Place Market, but it's worth a reasonable wait in line. Forget seeing the cheese being made and whatever else is going on. A great selection of cheeses to buy and an excellent menu featuring a mac and cheese to die for. They ship so buy some to have when you get home.

Have a sample of the cheese after viewing them making it. Local milk without rbst is used. One boy was crabby and fussing until his dad plunked a cup of mac and cheese in front of him. He was instantly soothed. I felt the same exact way when I was eating it. Warm and creamy without being salty.

This stuff just tastes good. Lines are pretty long but they have the cheese making process on display so that makes the wait go by pretty fast.

A great place to grab good grub and watch cheese making or turn slightly and watch the people of Seattle, both options often cheesy.. but interesting! Much more than just a cheese shop. Must try the Ham & Flagship cheese grilled sandwich! Great and friendly service...
