I've been to Hill Country several times. The key is to get moist brisket (super fatty!). Spicy sausage is a must. Pork ribs are good. Most other items are OK. Save room for the peanut butter and jelly cupcake. Soooooo good. Service is consistently excellent and the price is fair for what you're getting. Not cheap, but fair.

My boyfriend is a big meat eater and was very excited to try this place. I was skeptical (not a red meat eater, so chicken was my only choice + side dishes). This place is a carnivores dream. Everything here is about meat and bbq, nothing else matters. It´s a different concept from other restaurants. We dropped in by chance looking for a meal, on the hoof! It was a great experience. George our server was fantastic, he was helpful, as we're all the staff. We were craving for BBQ and ended up in Hill Country. Choose your protein, line up, grab your fixins, and eat your BBQ! Great place to have honest-to-goodness Texas-style BBQ. Service for drinks, other stuff was great. Good place and we'll definitely come back for more.

Great atmosphere, even better smoked meats. Everything -- the brisket, chicken and sausage -- was great. My favorite sides were the deviled eggs and German potato salad. Having dinner at the market makes me want to plan a trip to Texas.

Like the food (especially sausage, corn pudding and brisket), but the ticketing model and combination of self and waitress service is a bit odd. Not a dining experience, but good food.

Has a very comfortable vibe; the food is good but not great. A bit pricey for what you get. Still, it is a fun place to eat.

Was there twice during my visit to NYC, truly enjoy this concept of hardy BBQ, order their platters to share with some friends, first visit, we arrive at around 11.30am and food was great, on my 2nd visit, find the meat not as juicy as our first visit, but overall loves the vibes and venue.
