Quite impressive! The Texas family style restaurant has character, and flavour! The cafeteria, food ticket system actually is an excellent idea, as it allows for a wide range of appetites and tastes, at least when it comes to eating bbq. Try splitting a platter with someone, then return for your new favorite!

Went again to the "restaurant", (really a CAFETERIA since you need to go up to the counters order, and carry your food back to your table yourself) for a second try. UGH! All meats are weighed at the counter and charged by the pound (don't come if you are really hungry and don't plan to drop a load of money.)... More

This was fabulous for the 4th of July. Noisy, eatin' on paper and cardboard, plenty of BBQ sauces and amazing meat selections. We had brisket, moist and also lean, ribs, fabulous green beans, and yams with Bourbon. You could not possibly finish it even though you order it BY THE POUND! Go there with a group of friends and enjoy some... More

In my opinion, I don't think that there is a more over-rated food than Texas BBQ. Having said that, Hill Country does a great job of serving BBQ that would be well received in Texas. The brisket and the ribs were tasty. The sides were very good. So, if you're in Manhattan and, for whatever reason, you need to have... More

Whenever my boyfriend is in town he wants to go here very often. It is a unique setup for new york, eating on paper usually with just your hands. The meat is really tender and fresh, while the sides are also awesome. Be careful though, our eyes are always bigger then our heads and it can be $$$$.

Went to an event and ate family style...it was awesome!! Killer Mac & Cheese, sliced brisket (to die for) home made slaw, cucumber salad, green bean casserole, incredible ribs and chicken.. I love BBQ and this place is worth the trip...you will not be disappointed.

Best BBQ I've had in NYC. Little picey but low cost options for lunch as well. Did not try any of the beef dishes but looked delicious. I had the spare ribs, highly recommended. A lot of variety on the desserts and the sides were awesome. Staff was upbeat and helpful. Really can't say a bad thing about this place.... More

This place is quite different for NYC,, more easy going, organized but with a sense of 'take us as you find us'. It is a relaxed, self service style place with a lot of lively noise and fun... be prepared to eat vast quantities of meat, some of the cuts are easily enough for two people. The sides too are... Hill Country is not your typical restaurant. It is a cafeteria style venue. You go to the "meat" counter, and select the meats you want (by the pound) - ribs, brisket, chicken, etc. which is cut and placed onto butcher paper, and then you move to the "sides" counter for mac and cheese, beans, etc. I ordered the "moist" brisket... OK, I have to admit I was very surprised. This place is good. The brisket is moist and tasty, the sausage spicy (Kruez's) and the baked beans with burnt ends were wonderful. They were out of beef ribs so I didn't get to try those. They also have pork ribs and several of the usual BBQ sides like beans, slaw... More
