Description: Discover Roux and you just may become addicted. Our patrons tell us they’re mad about Roux. We knew when we opened we were creating something special, but our patron’s love of Roux is our best affirmation. Our Executive Chef Randy Dunn has created an innovative menu incorporating small plates and comfort food finished with a creative twist. Roux fuses southern comfort with modern sophistication, dishes inspired by our Chef’s grandmother’s kitchen then spiced with locally farmed ingredients that are all Asheville. Our menu features small plates that allow sharing as well as more traditional large plates. A diverse wine list, full service bar and select desserts created in the Roux kitchen complete your experience. At Roux you’ll also enjoy the best service and an inviting atmosphere. Join us for breakfast, lunch and dinner and become mad about Roux.

The meal was wonderful, start to finish! The salad dressing and blue cheese I both tasted individually from my salad and WOW! What a nice surprise from a usual hotel restaurant- Try it.

We ate here twice. The breakfast buffet was pretty good, but pricey. We then picked up dinner here (I was lured in by the after 5 pm $5 specials). You pay for what you get, so stay away from the crab cake, and the clam chowder was pretty good, but pricey for the amount I got. Just be aware that... More

I've ordered from room service at the Biltmore Hilton many times, but had never dined in their restaurant - Roux - until tonight. I'm glad I did. I started my meal with an excellent chicken tortilla soup. I was a bit disappointed the soup came out before my wine, but the wine followed soon afterwards. For an entrée I tried... More

Dear Larry6578 - We are glad that you got to experience Roux in person this time. I see that you favored many of our great selections, and the excellent service. We'll make sure to get the wine out first next time - a libation is always the proper way to start a meal. I am sorry about the bread not... More

We usually stay away from breakfast served in the hotel in which we are staying, but often the breakfast at a Hilton is quite good. Roux was no exception to that, and we found the breakfast on two different days to be very good. One morning we ordered from the menu, and the second morning we tried the buffet. The... More

I tend to avoid hotel restaurants, but not this one. Roux serves fresh, delicious food every time. The Hilton is our go-to hotel for a pre-sleepaway camp stay. So, I've eaten here every summer for five years. The breakfast buffet is a real winner. Fabulous omelets with local vegetables and cheeses; turkey sausage, in addition to the pork standard. Friendly,... More

Stayed in the hotel during the holidays. Decided to order dinner in room while we watched a movie - they did a nice job bringing up the food and setting it out. We tried the chicken tenders, a cup of soup, wedge salad, hummus and olives, vegetable and humus wrap, the wings, and ravioli. The food was all good, not... More

We made our Mother's Day reservation for 2:00 for a large family setting of eight. We purposely chose this time because the Mother's Day Brunch offered few choices for diabetics. We arrived 15 minutes. everything we discussed was in place! I had called Chef Randy Wed. prior to Mother's Day and requested Lamb Chops, Chicken Wings, and Fish Tacos. Chef... More

Made our reservation for Mother's Day brunch. brought my 87 year old mother-in-law and my wife. Thought this was going to be a great experience and it was not. Here is why: (1) Hotel guests in flip flops and shorts were intermingled with the people celebrating the holiday who were all nicely dressed. They should have had divided the area... More

We ate breakfast at the buffet at Roux 2 days in a row. Quite reasonably priced. It has all you would expect, breakfast meats, eggs, pastries and toast, a great fruit selection. The had biscuits and grave that were very tasty, and an omelet/pancake station, that was a real treat. They use mostly local fruits cheeses, and other items (obviously... More
