We ate at Daniel Thiebaut on a recent trip to Hawaii. It is a good alternative if you don't want to eat at one of the Kohala resorts, although it is priced almost as high. My husband and I stopped here just before sunset on our way back from Hilo to the Mauna Lani Resort where we were staying. The restaurant is charming, set right on the road in Waimea but delightful inside. Service and food were excellent. We found Daniel Thiebaut's at the recommendation of some local people we were talking to. It is so pretty inside! It was once a general store in the old Hawaii days, and much beloved by local residents. I had heard of the legendary beef served by Daniel Thiebaut and I can say that every expectation I had was exceeded by the meal I was served. My husband felt the same way. I also reccommend them for Sunday Brunch-alas the only day that they are open other than dinner. It was about $18pp and had several great selections as well as a make-to-order omelets/eggs/waffles.
