Hinterland...A new hub for contemporary American cuisine in Milwaukee, Wisconsin. Executive Chef Dan Van Rite and Sous Chef Dan Turek, explore a multicultural approach to cooking and eating. Their journey to create bold flavors and uncommon pairings is a daily mission at Hinterland.In order to accomplish this sojourn, we've partnered with fisherman in Honolulu, Seattle and Portland, Maine. These partnerships allow our chefs to procure fresh fish as often as two times a day. Other relationships with small, local growers and ranchers allow us to provide our customers with extraordinary game as well as hand foraged mushrooms and heirloom produce. The result is a menu that evolves with every season and changes everyday.

Hip Urban meets Savannah Grassland

Trendy eatery with a wilderness flavor, excellent presentation of a great piece of sirloin. Attentive service, staff friendly, earnest and polished. And polished rocks on your table with the votive candle :)

My husband and I were celebrating our almost 1 year anniversary. We thought we would do the chef's table. What a wonderful experience. It was not to busy so we got to talk to the chef's quite a bit. All 6 of us enjoyed our dinners. Very creative menu (are we really in Milwaukee? ) and terrific service. No complaints. I had a halibut entrée that was awesome.

EXCELLENT FOOD + SERVICE I would definitely come back if i was in the milwaukee area. Decent beer selaction, and clean envirnoment.

My wife and I stopped at Hinterland on our way to Summerfest because we wanted to have proper food for dinner. Walked in around 6:30 on Sat. and were told they were completely booked. Over 3/4 tables were empty. They seriously gave us (and others more casually dressed like us in the lobby) the once over. We were all told that we were more than welcome to go enjoy open seating in the lounge at the very back of the restaurant... More

Unusual and tasty dishes. Tried some cheese dishes, some Opa cheeks and duck liver pate dish among others. Good beer pairings and atmosphere in neighborhood you could find other places to stop along the way.

Took three work colleagues here for Dinner. Had great knowledgeable wait staff (Sarah) who really helped us through the beer menu and dining options. The charcuterie and cheese was excellent. I took 2 other couples there for a nice meal with wine. Food was not bad, though undercooked (almost rare) and not medium as we ordered it.
