Description: Hinterland...A new hub for contemporary American cuisine in Milwaukee, Wisconsin. Executive Chef Dan Van Rite and Sous Chef Dan Turek, explore a multicultural approach to cooking and eating. Their journey to create bold flavors and uncommon pairings is a daily mission at Hinterland.In order to accomplish this sojourn, we've partnered with fisherman in Honolulu, Seattle and Portland, Maine. These partnerships allow our chefs to procure fresh fish as often as two times a day. Other relationships with small, local growers and ranchers allow us to provide our customers with extraordinary game as well as hand foraged mushrooms and heirloom produce. The result is a menu that evolves with every season and changes everyday.

We had the Chef's table with beer paring and 7 courses prepared tableside by Chef Dan Van Rite. We must have had it, that's what it said we would get on their website, and what we ask for and paid for. The menu is very focused on wild game and clever ways to incorporate that into Gastropub food. Be sure to buy the cooks a round and you'll get a fee surprises!

Went for downtown dining week. Our party tried both the steak and Arctic char specials. Food was very tasty. Well seasoned and high quality. Our server was friendly and very knowledgable. Regular menu looks pricey, but I would go there for a special occasion.

Went here during Downtown Dining due to another restaurant losing our reservation. Hinterland accommodated us quickly at 5:45. Tomato dill soup and the salad were both great.
