Just north of San Antonio, at the edge of the Texas Hill Country, sits the small community of Leon Springs. Founded in the 1800s by Max Aue, Leon Spring's cityscape changed when Max's son, Rudolph, opened a one-stop gas station, garage, and grocery store. Bar-B-Q was added to the operation in 1989, and Rudy's "Country Store" and Bar-B-Q has been serving up tasty food ever since. The same original recipes that built Rudy's Leon Springs' reputation are now available throughout the Southwest. Our pits are 100% wood fired with oak, a slower burning wood than the mesquite used by others. Along with time and oak, we cook with a dry spice that ensures each plate of Rudy's Bar-B-Q is perfectly ready for you. Apply some of our famous "Sause" and dinner is served.

Great quick lunch

Stopped by on my way back to DFW from Austin. Greeted as soon as I walked through the door. While I was standing in line the meat cutter got my attention and ask what I was going to have and had it ready by the time I ordered and paid. Ad a smoked turkey sandwich. Tender and moist and had... read more

I found an article on ShopBrazos.com. So im in Waco on business and figure this place seems like its got good ratings. Kinda quirky line routine that was simplistic and easy to get brisket sandwich served on a strange tray that was like carrying a cart. Im still stoked because the smells of the food are filling my brain with... More

This is a good, clean location. They slice the brisket, in front of you. (ask for some of the end cut with all the seasoning taste. Very casual, Alot of Baylor Flavor...Have ate there several times, you can always expect the best. The "sides" are fresh. Cole Slaw, bean salad, potato salad.

For a chain restaurant, Rudy's BBQ is good. The sauce is decent, the brisket tender, and there are plenty of choices... all at a fair price. If you're looking for excellent, family owned BBQ though, I'd suggest checking out Tony DeMaria's or even Viteks. Not only are they unique to Waco, but they also serve fantastic BBQ.

Very neat place to eat. You get to select your beverage from an ice cooler. Beverages are in bottles like you used to get from vending machines. Prices are VERY reasonable. For 1/2 lbs of ribs it was $8 which would cost $15-$22 at other restaurants. Plenty of seating. Open concept and lots of windows. For comes in a plastic... More

We enjoyed the picnic table feel and the traditional BBQ sauce called, "sissy sauce." Traditional BBQ, tender, smoky and nicely sliced for the bread. If your looking for the "expectation of Texas Barbecue" you will find it at Rudy's

Honestly, if you're in a rush or don't feel like trying too hard (or want barbecue after like 7) then this is a good option. That said, if those don't apply to you go get real barbecue instead. Try the Rusty Star or Uncle Dan's.

You should definitely go here for some great bar-b-q in Waco. It's very easy to get the food and the people are friendly. Lots of sauce, etc at the table (my requirement)...Very good sides too.

A little confusing for a first timer how the ordering works but the food is really good. We just stumbled across this place and were pleasantly surprised.
