Just north of San Antonio, at the edge of the Texas Hill Country, sits the small community of Leon Springs. Founded in the 1800s by Max Aue, Leon Spring's cityscape changed when Max's son, Rudolph, opened a one-stop gas station, garage, and grocery store. Bar-B-Q was added to the operation in 1989, and Rudy's "Country Store" and Bar-B-Q has been serving up tasty food ever since. The same original recipes that built Rudy's Leon Springs' reputation are now available throughout the Southwest. Our pits are 100% wood fired with oak, a slower burning wood than the mesquite used by others. Along with time and oak, we cook with a dry spice that ensures each plate of Rudy's Bar-B-Q is perfectly ready for you. Apply some of our famous "Sause" and dinner is served.

First time at Rudy and enjoyed the barbecue very much. My husband were at another Rudy in New Mexico and said the brisket was really good. I actually like the ribs the most as they were very tender and well seasoned that they were finger licking good. I'm not a big meat eater and prefer salad but happily impressed with... More

This place was awesome!! I went there by recommendation of a client I visited and it did not disappoint. Took a little time to understand the 'system' but once I watched everyone else order and go through the flow it was great. Brisket was great, but lacked a bit of the smoke flavor I prefer. Cole Slaw and banana pudding... More

Moist brisket was pretty good. Nice crust and juicy meat. Good smoke flavor. Served with a serious attitude problem. Cream corn was pretty good. Can't get that in many places. Served with a bad attitude though. Jalapeño sausage was dry. Potato salad was institutional. And all of it was served with an attitude, like my being here was an imposition... More

Arrived during lunch on 07-24-2015. A very long line. Brisket was very fatty. I have been to other Rudy's in Austin and Denton, this one is not as good.

the reason I rated this like that is because I can't nor do I eat spicy foods. I do have family members that love Rudys. The price us okay and the place is always busy. You have to judge it for yourself

Best flavor of barbeque in all of Waco. Love the selection of lean or moist. Rudys beans were very good. Atmosphere is very nice. Great place for travelers and locals.

Know you've got to exit Valley Mills northbound or southbound to get there and then just keep "aiming" for the sign and you'll mange to get there. Stopped here this time while traveling Austin - Arlington. Made it just before the lunch crowd (11:15am) and sure glad we did. By the time we left, the line was back and forth... More

Easy access on/off to I35. Very friendly staff. Quick service. Good food and nice proportions. I got the bbq turkey sandwich and potato salad. All was good and reasonable price. The bbq was good but nothing special
