I ran across a Killeen, TX Daily Hearld article about Walter Brown, owner of "Big Hoss" BBQ, and Pat Kern, another supportive citizen who did an exceptional service by feeding 220 soldiers from nearby Fort Hood. Brown went to pay Kern $1700 for work done at his restaurant. Kern refused the money and said, "Take your money elsewhere." Brown kept the money and fed 220 soldiers at his newly opened BBQ. We were so impressed with the whole story, found at http://www.kdhnews.com/news/story.aspx?s=44066 We drove 3 1/2 hours from Abilene to visit "Big Hoss" BBQ. We had read reviews from another site that gave his BBQ a whopping 5 stars. "Big Hoss" was at the entrance when we arrived and made us feel like VIP's. We arrived early so he was able to give us a grand tour... of special interest is a display of "Old West" characters, each hand-carved from a single piece of wood.. no glue! .. done by local artists. Each booth has a special theme depicting lives of special folks in the area. Mrs. "Hoss" was equally gracious as was our server. We enjoyed our meal ABOVE ALL. Hubby and I shared our food together so we had Brisket, Spare Ribs and Chicken, along with sides of veggies and dessert; my Peach Cobbler w/Ice Cream was terriffic! What's nice is that you have an option to "Build Ya' Own Plate. I'm from the South, so I suggested corn sticks would be a nice addition to his menu; his slices of white and wheat breads were nice. Also, I prefer corn on cob over whole kernel corn. He also has specials, Friday is Catfish & Hushpuppies, plus other daily specials posted at the entrance. The day we were there was a yummy looking German meal, another was a Pork Loin meal. Next visit I'll try his Appetizer, "Bedroll Shrimp." His beverages are "soft," but I think you can BYOB. Currently, he's only open Fridays 4pm-9pm, Saturdays 11am-9pm and Sundays 11am-7pm. Out-of-towners will need a map or Street Pilot to find The Settlement, but you won't regret your visit! I was taken to "Big Hoss" for my birthday and found they put MSG in almost 100% of there food. That which I could try was quite disgusting. Over priced, inedible food. Not a good birthday.

Got a 6 dollar brisket sandwich off the truck the bread was thick and stale and it was skimpy on the meat.

I've eaten here twice, both for military functions...so we did not get to choose what we got to eat or drink, but I was not that impressed with the food, especially for what they charged us!!! This place is on the outskirts of town but doesn't take you long to get there. I came here with a small group early on a Friday evening and was seated immediately. We had a farewell gathering for my boss before we all deployed to afghanistan, and the staff at The Settlement went above and beyond to take care of our group that literally took up the entire restaurant. I usually like anything BBQ, I'm not hard to please at all. This place was horrible!!! I went there because I was craving ribs and this was the only BBQ place around that is open on Sundays. I loved everything about this restaurant except the food. The brisket was very fatty but very dry as well.
