Pan-Zur is best described as a progressive Spanish restaurant and wine bar with an intense respect for Old World flavors and techniques. Menus evolve seasonally and focus on small plates, tapas, charcuterie and cheeses. Chef Rei and his staff believe in supporting the local food economy and work extensively with local farms and purveyors who are dedicated to natural and organic practices while maintaining the highest of standards in regards to the products used. With seven beers on tap, a selection of boutique liquor cocktails, and of course seasonal sangrias, you'll have an easy time finding what youre in the mood for.

Great Tapas, Fun Atmosphere

This was my second time there. Another great experience. So many interesting menu items. Great combinations of flavors and ingredients. Always fun specialty cocktails. Good service.

My first visit to Panzur was my last. Though the food was delicious, the servers were downright rude and annoyed that they had to deal with a large party (we had 10 at our table). From the jamon croquettas to the perfectly cooked rib eye steak for two, the food at Panzur was amazing. The pig belly was incredible. Tivoli is an out of the way hidden hamlet in Dutchess County, NY near Bard College. We chose to eat there before going to a dance performance at Kaatsbaan. We were blown away by our meal here. The sunchoke soup was one of the best I've ever had. Especially loved all the ramps on the menu.

Way beyond the usual Hudson Valley fare, this is a place to go when you want to be surprised. Almost anything on the menu will taste better than you expect--the chef is a real pro mixing avant garde new Spanish (eg el Bulli) cuisine ideas with down to earth Hudson Valley staples and local fresh ingredients.

Tivoli doesn't seem like a food destination, but Panzur seems worth the trek. Primarily tapas/small plates, but also a small selection of full main courses. Some hits (stuffed squid, gambas, unique desserts), some misses (fussy flatbreads) in a serene setting (partially the effect of lighting nearly too low to read menus by...) in ever-hipper Tivoli. Substantially overpriced (or under-portioned - yes, I mean you, manchego!).

From craft cocktails (the dragon juice was amazing) to cheese & charcuterie board to tapas and finally dessert, there was not a single element of this meal that disappointed.
