Description: Since 1989,DAMON BAEHREL has worked completely alone at his home, which is where his small, handbuilt, 20 seat restaurant & 12 acre property/farm, that is the only source of ingredients for his original NATIVE HARVEST CUISINE, is located. Having no suppliers, Damon also creates all of the flours, fresh pressed oils, cheeses, pineneedle cured meats and vinegars from cultivated & native ingredients found on the property. Formally known as Damon Baehrel at The Basement Bistro, the restaurant has become a destination for food enthusiasts from around the world, often waiting years for their reservation, excited to take in the 4-5 hour Native Harvest experience.

I was thinking about what I might add to the spot on (except for one) reviews here. Perhaps it would be helpful to suggest that to really appreciate what might be in store for someone who has never had the privllege of an evening at The Basement Bistro is that probably 25% of the experience is the quality of the... Having met Damon a few times, I tihnk I had a little better luck at getting a seating than some of the stories I've read. Regardless, its worth to keep trying to get in as this place will blow your mind. Damon is the man...literally, its just him. He gorws and fabricates most of his own food and creates dishes... More

After traveling the globe the past 35 years, 45 michelin 3 star restaurants, 20 -2 star, we never thought we'd have the most unique and amazing experience of our lives in tiny Earlton NY! Working alone, this chef has set the bar for world class dining. After 4.5 hours (that felt like 45 minutes) we were introduced to ingredients that... More

I have hesitated writing this but after much thought decided that since I have always left so many positive reviews for restaurants, hotels, etc. I needed to be fair and leave this review. Unlike other diners it did not take us months or even weeks to obtain a table. Of course we were told in the beginning that it would... More

At some point during the meal, the food no longer mattered. Sure, it is the most inventive cuisine I've ever had and each bite has an un-imaginable flavor profile, but after eating here a few times and thinking about what the experience really meant, I have to say the taste of each bite is not Basement Bistro's legacy. The magic... More

Everyone knows Thomas Keller, Mario Battali, Tom Collucio, etc., but not many people have heard of Chef Damon. That's because he hasn't opened multiple restaurants in NYC and Las Vegas, Miami and LA. In fact, he hasn't really opened a restaurant at all, as he serves food in the basement of his house. And when I say he serves food,... More

OK, the words that I am able to formulate in my head about my dining experience last night.....outrageous, incredible, exceptional, etc....etc..., do not come close to touching what an unbelieveably mind-blowing culinary experience we had. Chef Dameon, is by far the most talented chef I have encountered, and the most humbled. Hand made charcuterie, cheeses, soup from puffball mushrooms, wild... More

I just had the best dining experience of my life. There is no other way to being to describe the experience created by Chef Damon Baehrel at The Basement Bistro. It is quite possibly the best restaurant in the entire country and it is still relatively unknown. The Basement Bistro has the highest food rating in Zagat at 29 and... More
