The Hollar specializes in southern style cooking, with just enough creative tweaks to add interest without at all detracting from the essence of the dish. The Hollar got my experience of New Mexico cuisine off to an outstanding start. Loved the atmosphere and the Green Chile stew was superb. Followed that up with a Green Chile Burger and part of my wife's green chile enchalada. Great place in a great little art colony.

I came here for some comfort food while passing through Madrid. I was pleasantly greeted by Tina who would check on me from time to time to make sure everything was ok. I would definitely return in the future if I ever pass through Madrid again!

Ate there twice in 3 days and perfect each time. The grits and shrimp are a standout. The second time it was difficult to not have them again so I had the Fried Green Tomatoes. The only thing missing were Thelma and Louise

The interior seating is rather limited and fills up quickly but when weather permits, the outdoor seating is a comfortable garden like feel. The place is popular among both locals and visitors. We stopped by for a light lunch on a weekday. We sat outside, and ordered a few appetizers: fried green tomatoes, fried pickles, and cheese grits. The food was good, the waiter was pleasant, and the atmosphere was relaxing--there wasn't really any ambiance, but dining outside is always pleasant. We enjoyed listening to the live music across the street.
