we were treated to dinner at this restaurant in mid January. We thought we were going to get a fantastic treat, but .... we all ordered either steak or rack of lamb. While staying at the Palazzo my husband and I were lucky enough to eat at CUT one busy Thursday evening. We were seated in the lounge area, not the main dining room, which was fine with us as the lounge was relaxed and elegant yet had an intimate vibe. I had heard a lot about CUT and made my reservation much earlier than my visit to LV. This is a very popular restaurant therefore it worth to do some preliminary efforts.:) This is a very busy place, and a bit noisy. I ate a lot of steak in Vegas and can say this was great steak. I got the 6 oz Filet and it was cooked to perfection - very buttery. They do char the outside on purpose, so next time I would order the steak medium rare instead of medium. The sides / bread / wine / everything was impeccable.... More

Although it's only open for dinner and always has a line up, if you do go, you must have the gougeres! I make them at home but it's a slog if you don't make them very often and I was thrilled to find them on the menu here. Hot, puffy pastry, cheesy inside with a slightly spicy finish.

The female half admits she is spoiled by a husband who cooks her steak at home over a wood fire, but.... The service was stellar, from arrival to the very end. We recently went to Cut for our Anniversary meal. I can not tell you how trilled we were with the meal. The service was better than perfect down to how the wine was poured. CUT is an amazing place to have steak and people watch. Price is reasonable on the top end $$$$ but well worth it. I enjoy going at least every 2 months with the misses so go and enjoy some good food.
