Best BBQ in Waltham. Once you have the BBQ pulled pork quesadilla once you will never be able to go anywhere else. Everything on there menu is smoked to perfection. the South Carolina bone-in wings are huge with the smoked meat falling off the bone. This is a great place for dinner or their is a large bar area with... More

Love the atmosphere here...my boyfriend and I love going to Bison to enjoy their Carolina wings and steak tips. They have an endless list of craft/micro-beers and are always willing to give you a taste of something before you commit to a beer! :) Great spot for a week night or a weekend if you'd like to kick back and... Nice bar with a lot of action that night I was there. I ate at the bar and started with a beer and order of wings. I went with the spicy South Carolina wings ($10) with a side of hot sauce on the side. The wings were bigger than average and very tasty. The smoke flavor permeated all the way... More

This was a fun atmosphere with really nice service, but at the end of the day, my food was just ok. In my opinion - that's what counts at restaurants. The beer selection was really good though. I had a side salad and Bison Tips thinking the namesake dish would be the best. The sides were decent - veggies were... More

Wings here are most underrated item on the menu! Huge wings that are smoked to perfection and fall off the bone! Phenomenal beer list too. Huge draft selection and tons of craft bottles as well.

My husband and I enjoy good BBQ. He ordered the ribs; I ordered the chicken. Both orders would have been good if they had been fresh. Both the ribs and the chicken tasted as if they were 1 to 2 days old. They had been sitting in a warmer for a long time or had be reheated at least once.... More

We and our friends stopped for an early supper on a rainy afternoon, were warmly greeted and seated immediately. The menu listed the usual foods you would expect and a whole page of craft beers. It was interesting to read the places where these were made. Drinks were served quickly and a loaf of cornbread was brought to the table.... More

The corn bread was very tasty, not super sweet but not dry. I was disappointed with the ribs though, very dry. I will definitely be coming back to try other cuts of meats and for the great beer selection.

Bison County's version of barbecue was very good - among those in our group, we had ribs, pulled pork and beef brisket, and we liked them all, although found that the thick slices of the brisket were a touch on the dry side. There is a pretty good choice of side dishes, and the grilled veggies (extra charge) were especially... More

While I really want to like this place, especially since my favorite Waltham joint, Jake Dixie's Roadhouse closed 2+ years ago, I can't help but expect and want more out of this place. And I'm not alone either, as my significant other and my friends had the same comments based on our visits there. And it's a shame really, especially... More
