Description: As a gastro-lounge, Sable Kitchen & Bar will do for hand-crafted cocktails, spirits and wine what the gastro-pub has done for beer: pairing seasonally-inspired cuisine with an artfully designed cocktail, spirits and wine program. Sable’s menu fuses traditional cooking techniques with a modern flair that seeks to highlight the harmony between cocktails, spirits, wine and cuisine. The bar menu will focus on snacks, medium sized plates and brick oven flatbreads while the dinner menu combines small, medium and large plates to encourage sampling and sharing. With a commitment to working with independent Midwest farmers and purveyors, the menu will draw inspiration from local and organic ingredients—everything from seasonal produce to free-range meats and sustainable seafood. A sleek and sexy space, Sable is a refreshing update on the glamour of the 1940’s, as old Hollywood charm mingles effortlessly with modern industrial touches and classic Chicago warmth.

Went here with my whole family...ages 23 to 53. Amazing bar menu...so many fun, delicious and creative cocktails. Loved the touch of the fun "sayings" on the menu. Food was delicious, inventive and beautifully prepared. We were all pleased with our choices...the most difficult part was deciding which to order! Great service, fun vibe...when can we go back? I hope... More

We had so much fun and such great food. The war of the roses drink was great. Had two. Yum! Loved the deviled eggs, jerky, Dates tuna tostada, quail, scallops and the corn brûlée. Oh wait I forgot the desserts, two wonderful desserts. Everything was great. I would order it all again. Christian and Heather were great as well. Love the... More

We went for dinner, great atmosphere, busy and fun, have a killer bar up front and a smaller eating area in the back. The food, small plates, was imaginative and fabulous. We are pretty fussy and we were very impressed. Service was good. We went back the next day for breakfast simply because thery were close to the hotel and... More

Accidentally stumbled into Sable on first night in Chicago and what a start - felt good from the moment I sat down. Relaxed but efficient service (really difficult combo to achieve) and ideas like small plates meant we tried both starters and mains. On the food front - I now like kale, date/cheese/bacon rolls delicate and delicious, pork and smoked... More

In a city like Chicago, it is crazy to eat at the same place twice....unless it as good as this!! We were blown away by the friendly staff and the wondeful selection of menu items. We were staying in the Hotel Palomar which is in the same building. We don't often eat at hotel restaurants, but this place isn't your... More

My sister was in town for work, so at the end of a long week we were ready for something fun. Sable did not disappoint. Our server, whose name escapes me, was fantastic. I have celiac disease, and she took the time to go through the entire menu with me. We loved the small plates for easy sharing. We shared... More

Great energy and vibe for a hotel restaurant. Specialty drink selection is extensive and excellent and love the option of doing small plates to share. The corn creme brulee is ridiculously good and for this non-Gin drinking girl, the War of the Roses was outstanding.

My husband and I had a date night here and thoroughly enjoyed our dinner. Everything is offered tapas style, and it was fun trying all the creative, out-of-the-ordinary dishes. Highly recommend!

This dinner was a really important one for me. VIP business guests. I was looking to impress. I trusted Trip Advisor to deliver but sadly this one didn't. Australian's are tough to please because we have access to extraordinarily high quality restaurants. We expect the same when we travel, but in the US, we are rarely satisfied or impressed. Food... My sister and I really enjoyed the food and atmosphere. The waitress and kitchen were more than accomodating with my sisters health dietary restrictions and as a foodie, I was in Heaven. The lobster roll was especially great. Cool food; Cool vibe.
