Description: Opened in December 1999, in Vail, Colorado, Larkspur features the modern technique and preparation of American classics. An evolution in refinement, Chef /Owner Thomas Salamunovich approaches his craft in the same manner he approaches his guests: with a fresh eye and a nurturing spirit. With 10,000 square feet of restaurant space, distinctly different areas have been created to accommodate the preference of all patrons. The restaurant is warm and polished with an open kitchen, massive hearth, and a 5,000 bottle transparent wine cellar, serving as the centerpiece of the main dining room.

Larkspur was a wonderful restaurant and experience. The food was superb, one of the best meals I've ever had in a restaurant. I attended the Jazz After event following the Dallas Symphony concert. It was a treat and the venue, Larkspur Restaurant, was a good place for it. The food was fine - a bit over priced but what, in Vail, is not.

We had not visited Larkspur in quite a few years and it will be quite a few years before we return. The place started off fairly empty and we can see why. Larkspur is fine dining with a casual apres-ski vibe, conveniently located at the base of Vail mountain. Warm up by the fireplace and enjoy a drink and fine food. Kid-friendly with attentive service.

Went there recently with my family and the experience fell completely flat vs. my prior visits several years ago. No atmosphere and half empty on a Saturday night. I dined here recently with friends and we found the service, food and wine to be most excellent. We thoroughly covered the menu and we found no weaknesses, each appetizer and entree was superbly prepared and the service matched. The sommelier provided proper guidance of the cellar selections and we all commented that the evening was more than enjoyable.

Went here twice in the last month. Each time was pretty well perfect. To me - the best restaurant in Vail - certainly in Jan 2014 - and I did try most of them when I was here for 3 weeks. Great service, great food and while on the expensive side, well worth it.

Maybe I just happen to go on a bad day. The jazz band had not yet started. There was no real atmosphere and service was not pleasant.

Just enjoyed a wonderful meal at Larkspur. Service was stellar, and the food was delicious. My peers definitely made the best choice by ordering the sweetbreads. Sooo tasty! Sommelier picked some very tasty, reasonably priced bottles for us. Cocktails were ok, but I'm a manhattan snob and rarely are they ever up to standard unless I make them myself (ha!).... More

4th year in a row we ate ate Larkspur. Great place for families or groups, especially in bar area. Larksburger is really great. Get the donuts for desert.
