I admit to preferring hanger steak but was amazed to see NYC or Aspen prices here. It was delicious but not worth the exorbitant price. At least I did not go for the $85 tasting menu with optional wine accompaniment of $45. These prices far exceed other restaurants in Steamboat. The food is not appreciably better and the atmosphere somewhat... More

Our dinner was excellent at Bistro CV. We had two picky eaters in the group and our server helped us to understand some of the ingredients that may not have been listed on the menu. The pork trio was so good - the spring peas surprised me at how good they were. The homemade chorizo was the best. Dessert of... More

Everything we had tonight far exceeded our expectations. From the clean crisp flavors of the yellowtail tartare, to the unctuous umami of the rillettes, to the sheer goodness of the braised octopus, to the complexity of the red velvet cake. Nothing short fof amazing.

The service is spot on, not rushed but perfectly timed for our party. The waiter recommended wines with our entrees, and they were not only fantastic, but also extremely reasonably priced. Greeat cocktails, and the dinner was simply amazing--fresh ingredients, creatively prepared, just amazing. I had their olives, a salad with fresh herbs an pepitas and beets, and an entree... More

My wife and I went twice in one week. We're from Denver and were in for a conference. The word was the Bistro CV is THE place. Cait is a foodie, I'm a skeptic. In just a few words, this place and its staff gave us two of the most memorable meals we have ever had! Ashlee was our server... More

Service is awesome, setting is relaxed, menu is unique and always changing, wine list is extensive and balanced, and parking is not impossible. Only thing they really, really need is a proper coat check!

What a wonderful delicious experience and a wonderful birthday dinner for my husband. This chef knows his food and exactly how to blend flavors. The grilled Caesar was amazing and out of the box creative. Quail just loaded with flavor and juiciness and the gnocchi was light and so delicious. We had to go back again before the end of... More

I have to admit we were a little concerned as to the menu of Bistro CV, but we needn't have been as there was plenty to choose from, even for the younger members of our party, all food was of excellent quality. The pate and tuna tacos were especially delicious. Well worth a visit. The waiting staff were attentive without... More

A bit slow on the service. They just seem to not pay attention to their tables. Service is definitely lacking. That being said, the food was really good. In fact, the food was fantastic. Small portions but worth every bite. They could step up in service...a lot!

Everything was delicious! do be prepared, it is high priced, but we each had a lot of... More
