My wife and I ate at the Watercourse when we visited Denver a week ago. I've been vegetarian for 25 years or so and have eaten at lots of vegetarian restaurants. So many incredible choices! Breakfast options are plentiful (I loved the vegan breakfast burrito), apps are great (on another visit, we tried the buffalo tempeh wings and onion rings), and they have great sandwiches too (great Reuben and the Buffalo Tofu was awesome)! I think my title says it all!! We initially sat outside and I think our waiter forgot about us. We moved inside because of the heat in any case and our new waitress couldn't have been more helpful,

Went to dinner last Friday with spouse, 7 year old, and work colleague while at a conference. The staff were extremely pleasant and attentive without hovering. Had pasta with seasoned mushrooms, artichokes, and broccoli. Seems healthy in terms of ingredients and tastes well together. Seating service wasn't ideal, had a queue waiting for tables, when many tables inside were empty.

They have a wide variety - I have to believe something for everyone. Lots of vegan. We had tomato, curry & (something) soup which was spicy and delicious. The Juan wrap was delish and don't miss the ho ho cupcakes!
