Everything at Carlos Bistro is top notch. The owner, Carlos greets each diner in the parking lot starting the evening off with an amazing customer experience. The food was impeccable! From the salads, to the entrees to the dessert. This is one of our very special treat restaurants.

Wide range of menu items serve enthusiastically and supervised by Carlos himself. The menu items were only slightly less eclectic than the wines. That made both the food and wine selecting fun, even exciting. My dinner was wonderful, my wife was less impressed but not so that she wouldn't return.

The French escargots were delightful, and the sauce they came in perfect for dipping. The house specialty salad with half lobster and goat cheese is a treat for the senses. The veal scaloppini were delicious. The seafood special, "something-something" sole, was somewhat bland and the risotto was overcooked. Both main dishes had great sauces. The dessert with berries and vanilla-burbon... More

We were vacationing in Colorado Springs for our first anniversary and went to Carlos' Bistro based on reviews we read. It was outstanding from start to finish. We shared a fried calamari appetizer - delicious. I had the Caesar Salad, husband had the shrimp and scallop salad to start. Both fantastic. We went with beef for the entree. I had... More

Lsat night my husband, two sons and myself went to Carlos Bistro for a celebration dinner. As usual, Carlos greeted us in the parking lot as if we were best friends...we've eaten here a few times, but not enough for him to remember us...but he treated us as if we did! We ordered the Foie Gras and Hush puppies as... More

The menu and food is fantastic. Many mouthwatering choices. The lobster salad is the best salad I have ever had. There is a reason this is a locals favorite. The service is always second to none. I could go on and on about this fabulous place but I will just say it is a not to be missed in Colorado... More

This was recommended by friends of ours who recently ate here. We decided to try it while in town. We were greeted at the door on a Friday night by the owner and shown to our table. When was the last time an owner did that?? Then he personally told us about the menu items and specials, as well as... More

My husband took me to Carlos' Bistro for my birthday. From the moment that we drove up and were greeted by Carlos, everything was excellent. I had the lobster salad appetizer and blackened halibut, my husband had the nachos appetizer and blackened ribeye. For dessert, I couldn't decide and had dark cherries soaked in a yummy alcohol, I can't remember... More

My husband and I dined at Carlos Bistro last night. The decor was in earth tones with soft lighting, both casual and inviting. From our table, we could see the lovely patio and the mountain peaks beyond. Our server was knowledgable and helpful. The choice of wine, Elements from Sonoma, was avlovely blend and the perfect accompaniment to our meal.... More
