Great Subs

They have multiple locations, one on pearl Street Mall, the better one is closer to the University campus. Fresh meats, and loaded with calories.

Pick up a menu and take some time deciding as the choices are many: hot, cold 6",12"subs, rolls, which sauces, which cheeses, which vegies. There are also salads,speciality items and soup. This is a MUST see place in Boulder. The hot pastrami sandwich on their freshly baked bread is simply to-die-for.

From the name/look of the place, we expected something a little more like a NY deli. Sandwiches were good, but nothing you couldn't get at the Kroger deli. Boar's Head cold cuts on Italian bread. Sides are available but cost prohibitive. Service was good!

Salvaggio's is probably the only place in Boulder where you can get decent deli sandwiches. The roast beef with everything is the best around. Prices are reasonable. I've been going to Salvagio's for over 15 years and I'm sad that the bread has gone down hill so much. They've downgraded the quality of their bread recipe twice over the 15 years and it's sad you can't get a good sandwich on NY style Italian bread any more. Bread is good. Meat is Boar's Head, which is terrific. Sandwiches are reasonably sized, but not super generous. Service isn't the fastest, so lines can form around lunchtime. One thing I didn't see that surprised me was the option to add bacon to a sandwich. No bacon?? One star off for that.

It surprises me that - on "The Hill" in Boulder - Salvaggio's hasn't caused Cheba Hut to close, but I think it's because Cheba Hut is a good alternative when Salvaggio's line is out the door (and this has happened to me often). Every time I'm in Boulder I stop here and try a new sandwich. So far I've had the meatball, prime rib and the cold Italian. All were excellent.
