I've been going to Salvagio's for over 15 years and I'm sad that the bread has gone down hill so much. They've downgraded the quality of their bread recipe twice over the 15 years and it's sad you can't get a good sandwich on NY style Italian bread any more. Everything else has stayed top notch with good ingredients and... More

Bread is good. Meat is Boar's Head, which is terrific. Sandwiches are reasonably sized, but not super generous. Service isn't the fastest, so lines can form around lunchtime. One thing I didn't see that surprised me was the option to add bacon to a sandwich. No bacon?? One star off for that.

It surprises me that - on "The Hill" in Boulder - Salvaggio's hasn't caused Cheba Hut to close, but I think it's because Cheba Hut is a good alternative when Salvaggio's line is out the door (and this has happened to me often). That just goes to show you how great the place is! It has more of an "east-coast"... More

Every time I'm in Boulder I stop here and try a new sandwich. So far I've had the meatball, prime rib and the cold Italian. All were excellent. If your a clean freak and need your restaurant to look and smell like a hospital this place is not for you. The guys here are loud and a little crazy but... More

Forget the service, it's all about the great tasting sandwiches! Their Italian is one of the best I've ever had.

Fine, superb, exacting Italian sandwiches. Big, delicious, so that you don't even care that you are cutting the crap out of your mouth with epic amounts of crusty bread. Fantastic, awesome hoagies.

If you go to Salvaggios, go to the one on Pearl St and 26th and get the prime rib sandwich on a roll with everything, horseradish mayo, and salt/pepper, oil/vinegar. You can't go wrong. I get it every time I go.
