If you eat at Rio Grande in Boulder often you know it is inconsistent. Tonight was one of those nights. Ordered simple cheese enchiladas but without onions and hubby got fajitas. We came here for a retirement party for a colleague. We started out on the roof, which has an incredible view, but had to move indoors when there was a thunderstorm. You can't beat the roof for a great place to have your food. GORGEOUS views of the mountains. However, they cool it on a hot day and water can accumulate on the umbrellas and spill down on you, so choose your table carefully. The food was awesome!! Very fresh and well prepared. A bit pricy, but worth it.

I loved the the braised pork tacos with slaw and grilled pineapple. The portion size was adequate, and the menu had several other unique options. Large seating area so a wait is unlikely.

The fajitas are really, really good. And the margaritas are first class. Not the pre-mixed sour stuff you get everywhere else...we ordered regular margaritas with a light bit of strawberry and they were perfect. And the roof top deck is great! Looking forward to eating there again.

Have been coming here probably at least once a month since they opened back in the 80's. Best margaritas in town, free chips & salsa, good service. The rooftop patio is great in the summer.

We've been to several of the Rio Grande Restaurants in Colorado and always love the Margaritas. We dropped in for some happy hour drinks and appetizers. Being from Texas, I love me some margaritas! Locals recommended Rio as having fantastic margs, and they didn't disappoint. Fun atmosphere, lively crowd, good food. Would definitely come back to Rio Grande if I find myself in Boulder again!
