First time in about 3 years we have been to Cuistot. We started in the bar and had a great time with Bartender John. The bar was packed! When we travel to the desert cities we come from a central time zone so a 4 to 6p.m. time frame is perfect for our first evening meal. Like some other reviewers, we have experienced inconsistency and indifference at Cuistot. Sometimes the food seems inspired (like when the Chef takes the time to get the cooks to focus) and other times it is insipid. Stopped in on a whim, and was pleasantly surprised. Wait staff was excellent, and we followed his recommendations. Every dist was impressive, and well executed. Would highly recommend.
