Expected my Beef Carpaccio to be very similar to the Beef Carpaccio I had at the Brio, Tivoli Village, Las Vegas. IT Was Not! Your chef could take some lessons from that Brio in how to prepare Beef Carpaccio.

I go to Brio quite often, as it is a cut above the typical Americanized Italian restaurant. The food at Brio is akin to that served in Tuscany.
