The chips we're hot, thin and salty. The salsa was average. The guacamole was awesome! When we received the guacamole, I was a little leery. There were no tomatoes, onions, cilantro or seasonings to be seen. However, as soon as you tasted it, all doubt's disappeared. I could have made a meal of just the chips and guacamole! I ordered... Lets face it folks, Daphne, AL and it's neighboring cities are not known for their Mexican food. Having lived in San Diego and ATL, where authentic and Americanized, great Mexican food eateries are abundant, I know what good Americanized Mexican food tastes like and the choices around here are very limited. We have eaten there before and meal etc. was always good. Today because of a time factor we did take out. Meal was terrible. Chicken quesadilla had very little chicken. Our experience was great except for having to listen to a nearby waiter...not sure how his guests sat through the meal. I have eaten at Don Carols several times. I recently ate there with several friends. The chips and salsa are always good. I usually get the been enchiladas with rice. The food is very good. The service is very good also. I always enjoy going back to Don Carlos.

For a chain restaurant out of Houston & Waco this place fails miserably. Standard mexican food. Nothing exciting about chips/salsa. Got frozen margaritas..tasted like frozen limeade...too sweet and not enough alcohol in it to pass for an alcoholic beverage. I got fish tacos.. fish was cubed...how do you get cubed fish? Also had a pink thousand island -ish dressing on it.. not a great sauce for fish tacos. Husband got enchiladas. Passable mexican... Not quite Tex-Mex, but not sure what it was. The guacamole was very good as was the queso. But the dinner wasn't very good. I had cheese enchiladas and they tasted strange. The fajitas looked good, but none of us ordered them. I don't think we would eat there again.

The food was good but anything extra was given a charge. We ordered fahitas and enchaldas but had to pay extra for sour cream!! They also did not get the order right the first time, but did correct it.

Perfectly acceptable middle ground Mexi-merican food. Or at least it was years ago, now it's not quite as good as it used to be. But still OK.
