We thoroughly enjoyed our dinners...my husband chose the lamb for his birthday cuisine & I had the salmon. Both were delicious. Our waiter was very attentive and very personable.

The food is extraordinary! The owner Matt, is talented and truly a culinary artist. The seasonal menu is always fresh and delicious. The atmosphere is delightful and we like celebrating special celebrations here. I highly recommend Sybaris for a wonderful dining experience.

The menu lists unique choices all based upon local, in season ingredients. I was concerned my fiancé wouldn't care for the choices from the small menu and because he's not as big of a foodie as I am but he ended up loving everything. Fantastic place featuring what appeared to be all local ingredients. Great atmosphere in restored building in small town Oregon. Excellent music and ambiance to go with superb meal. Creative menu with options for all. According to friends we ate with from Albany, this place has been around for a while. They had their routine down pat. Nice people too.....

The menu changes monthly, and Chef Matt Bennett uses as much locally-sourced and seasonal product as possible. If there are specials the day of your visit, they are always terrific. wonderful wine selection, great cocktails. Head Waiter Jesse Brown and his team do a wonderful job
