Recently refurbished "Metoba soba" has been serving authentic "soba" in downtown Matsumoto for so many years. This restaurant specializes in zaru-suba, a Matsumoto delicacy. These are buckwheat noodles served cold. You can have them straight up or as a "triple decker" with three toppings: 1) seaweed, wasabi, pickled daikon & soy-dip, 2) grated yam, sesame seeds & soy-dop, 3) green tea powder. We went for lunch and Metoba Soba simplicity gives deep character. The Soba and the Tsuyu (soy-dip) combination produces fragrant and pleasant culinary experience. Our favorite is Ten-Zaru-Soba. Direction: The restaurant along the Metoba-gawa River. 3-4-8 Chuo, Matsumoto-shi / +81-263-35-8502
