I read the reviews and was excited to have lunch there today. Unfortunately the signed said closed for the off season and did not post an opening date. I needed to post a rating, even though I did not get to enjoy lunch. I guessed:)

Cool little cafe atop a bookstore. Windows all around - if the trees are turning, you can get a nice dash of color! Menu was primarily vegetarian/vegan, but they did have fish and chicken options as well. The Golden Tomato Gazpacho was lovely - nice texture and blend of flavors. The Kale & Butter Leaf salad was nice, but not... More

We took a look at TripAdvisor my wife and I to find with no mistake a good place for dinner. So we choose in the top 5 a good place in Aspen. "Pyramide Bistro". What a mistake, the menu was disappointed, waiter was in&out, we were waiting for everythings. Its expensive too. You can find better place in Aspen.

The Pyramid is a fabulous restaurant. Did you know that you can eat a gourmet meal to live? The presentation is beautiful, food delicious and creative, and service is excellent! Thanks to the chef and Dr. Furhman for the inspiration!

This summer driving around Colorado we stopped in Aspen for a few nights and decided to try out his Bistro. Upstairs with a book store on the ground floor it was everything we were looking for and MORE. What more to ask for then healthy food, almost vegetarian, consistently flavorful and nutritious. Small menu, but take a stab at anything... More

We were in Aspen for the week and my partner is almost exclusively raw vegan while I am vegetarian. Surprisingly, there is a lack of dining options for us in Aspen but Pyramid was perfect. The humus was excellent as was the vegetarian sliders. The beet/arugula salad was exceptionally good and all were very generous portions. The service was a... More

A group of 8 ladies dined at this establishment on a Thursday night. At first blush it seemed interesting as you walk through a bookstore and up a staircase to the restaurant. But from then things went downhill. No one was there to greet, the restaurant only serves limited and odd beer and wine selections and the menu is not... More

We both chose delicious vegetarian entrees and were pleased with our choices as well as the presentation. Service was excellent in the lovely outdoor setting. Tucked into the upstairs of a classic vintage book store, this is a quaint restaurant.

After a long day of hiking the West Maroon trail, my friends and I wanted a special dinner. We were very disappointed in the treatment we received at this restaurant. After our salads were served waitress cleared the table and after several minutes asked if we wanted dessert? We had not received our dinner! We had mixed reviews about the... More

Plenty of vegetarian and vegan options that are delectable as well! Set above a bookstore (that will hopefully still be there after the building is sold), the setting and decor are modern yet cozy. The service was good. And to top it off, the raspberry chocolate pot de creme was perfect.
