We found this great place thanks to other TripAdvisor reviewers, and it was a great suggestion. A healthy restaurant isn't one that normally jumps out to me but the interesting menu won me over. For starters my other half ordered the chili and I could not keep my spoon out of it. Delicious! We also had the pot stickers and... More

The setting was small and close. You might have trouble finding it above Explore Booksellers. We went for lunch and I expected an over-priced, bland food place just right for Aspen. Instead, we got delicious, healthy food at a good price (for Aspen). My two children and I ate for $56 including tip (that was two kids meals, an adult... More

We have been coming to Explore Bookstore for years and used to eat in the cafe upstairs. This is the first time we have eaten at their new restaurant, Pyramid Bistro. We were not disappointed. Our waitress could not have been more attentive and anticipated our needs. The food was very fresh and flavorful. Since we have two vegetarians in... More

Best vegetarian food in town served in style by knowledgeable and friendly staff. Not much more I can say but that I went back twice while I was in aspen.

If you are looking for healthy and delicious food, here's your spot. No need to worry about too much salt, fat, or sugar lurking in what appears to be healthy. It really is healthy here, based on "nutritarian" principles that emphasize the most nutrition per calorie. We were there yesterday, and I (along with most of the others in our... More

This is hands down my favorite restaurant in Aspen. You can come in feel hungry and leave feeling both full and cleansed--like a fantastic yoga class in a meal. Although I'm a vegetarian, my family of meat eaters loves the Pyramid Bistro too. The chef goes above and beyond when it comes to selecting unique, fresh ingredients and pairing them... More

I read the reviews and was excited to have lunch there today. Unfortunately the signed said closed for the off season and did not post an opening date. I needed to post a rating, even though I did not get to enjoy lunch. I guessed:)

Cool little cafe atop a bookstore. Windows all around - if the trees are turning, you can get a nice dash of color! Menu was primarily vegetarian/vegan, but they did have fish and chicken options as well. The Golden Tomato Gazpacho was lovely - nice texture and blend of flavors. The Kale & Butter Leaf salad was nice, but not... More

We took a look at TripAdvisor my wife and I to find with no mistake a good place for dinner. So we choose in the top 5 a good place in Aspen. "Pyramide Bistro". What a mistake, the menu was disappointed, waiter was in&out, we were waiting for everythings. Its expensive too. You can find better place in Aspen.

The Pyramid is a fabulous restaurant. Did you know that you can eat a gourmet meal to live? The presentation is beautiful, food delicious and creative, and service is excellent! Thanks to the chef and Dr. Furhman for the inspiration!
