If you would like to enjoy thoughtfully prepared, delicious food which is really good for you, go to Pyramid Bistro! Definitely order the Thai butternut squash soup, which is most flavorful butternut squash I've ever had. Although the restaurant is primarily vegan, they have some dishes with chicken, fish and shrimp. They offer a delicious ahi sandwich for lunch. You... More

A tiny restaurant where we had a delicious lunch for 4. Please keep in mind the dining area is quite small and the tables tiny. These tiny tables tend to frustrate me, but I was able to accept this discomfort since the food compensated for the frustration. Wonderful Vegan and vegetarian options. Unique recipes and lots of flavor to each... More

Shares a building with an exceptional bookstore. The entrance to the restaurant involves walking through the bookstore. The menu is quite extensive, and excellent for those concerned with eating in a healthy, conscious, organic way. Portions are generous and prices are far better than reasonable. Eat elsewhere in Aspen if you must, but eat here if you can. A true... More

The Thai butternut squash soup was terrific. I ordered the sweet potato gnocchi that was recommended but it was terribly bland. The bill for two people at lunch was 42$. I wouldn't go back.

Nestled above an old fashioned bookstore, you can browse if you need to wait. So worth the wait as the food is carefully prepared and delicious. A few outside tables are intimate and give you a wonderful view of Aspen mountain! Special place for a lunch or dinner you won't forget!

This restaurant has delivered consistently good meals for many many years in a very charming and relaxed atmosphere for lunch or dinner - either on the terrrace or in the bookstore. The food is of the highest quality with numerous vegetarian and vegan options as well as some good dishes for the meat eaters. These guys are called to cater... More

We enjoyed our meal and the atmosphere of Pyramid Bistro sitting outside on their balcony on a splendid fall evening. Service is a bit casual so you need a little patience but, hey, on a lovely day, it's all in an evening's meal. We were only in Aspen one night and didn't want super casual or super cuisine dining so... More

A visit to the Pyramid Bistro is a double header. Not only will you taste the most unusual and healthy nutritarian (yes look it up) cuisine, prepared by Chef Martin Oswald, you can brows a wonderful independent book store which you must pass through in order to get to the restaurant. While the emphasis is on vegan and vegetarian dishes,... More

We only eat here every time we go to Aspen. You enter a fabulous bookstore and go upstairs to dine in the open under a large tree. The offerings include many many delicious vegan gluten free healthy meals and desserts. They even serve vegan wine! great food, drink, service and ambiance!

Based on many excellent reviews my wife and I were excited to try the Pyramid Bistro. Well...maybe I was expecting too much. We were seated on the deck which overlooks an alley which must house several trash containers. Every now and then the gentle breeze brought in a few unpleasant odors. My wife ordered a chicken stir fry and I... More
