The Pyramid is a fabulous restaurant. Did you know that you can eat a gourmet meal to live? The presentation is beautiful, food delicious and creative, and service is excellent! Thanks to the chef and Dr. Furhman for the inspiration!

We were in Aspen for the week and my partner is almost exclusively raw vegan while I am vegetarian. Surprisingly, there is a lack of dining options for us in Aspen but Pyramid was perfect. We both chose delicious vegetarian entrees and were pleased with our choices as well as the presentation. Service was excellent in the lovely outdoor setting. Tucked into the upstairs of a classic vintage book store, this is a quaint restaurant.

Plenty of vegetarian and vegan options that are delectable as well! Set above a bookstore (that will hopefully still be there after the building is sold), the setting and decor are modern yet cozy. The service was good. And to top it off, the raspberry chocolate pot de creme was perfect.

It can be hard to find a really good Vegan/Vegetarian restaurant while on the road, but we scored a bit hit at Pyramid Bistro.
