We dined at est in mid- Sept on a Saturday night. With the hotel, nightclub and restaurant all located on different floors of the same building -- this place was one of THE places to be on a Staurday night in Sydney (and the line to get in the club was proof positive). We stayed at the Establishment Hotel overnight as a special treat as we were dining at Est. which is located on level one. The restaurant was wonderful and food truly awesome especially my entrée the Moreton bay bug with snow peas and lime and coriander cress and not to mention the mouth watering passionfruit soufflé. The degustation is fantastic, they did leave a little too long inbetween our courses at one stage, but made up for it by giving us an extra glass of fabulous wine each and a pile of truffles on Seans main for his bday, yum yum, definitely one of my faves! more
