We have been to Anguilla many times and always have several meals at Hibernia. We keep coming back for tranquil, elegant lunches and dinners. We had a most lovely evening dining at Hibernia. The ambience, food and service were all wonderful. The new gardens are such a soothing and welcoming environment. Mary Pat was warm and gracious. In quickly reading the most recent reviews below I thought “The Most Serene, Romantic, Dining Setting on Anguilla” perfectly summed up my feelings about Hibernia. My wife and I have been coming to Anguilla for nearly 30 years. We have tried many of the high-end restaurants but in our opinion Hibernia continues to be the best. We've been here before and I always order 2 appetizers. The foie gras is superb.
