If you would like to have Michelin chef to do the service, you can go to this restaurant which has a good value-price balance. Palma is not a conventional restaurant, and that may explain some of the unfavorable reviews. There are plenty of places to have traditional Ligurian food between the French border and La Spezia, many quite good and some rather awful. We had dinner here during our visit to Liguria. We took to full tasting menu and we have never tried som many strange combinations before. But they were all good.
