The post-modern d��cor of the two dining rooms ��� one of them available for private hire ��� features a fabulous ruched fabric ceiling, wittily skirted lighting, white linens and seating, and unforgettable views over the estuary and the Guggenheim from the terrace. Light pours in everywhere. Innovation is on display in every mouthful that emerges from Canales��� kitchen. There���s no menu of the day; you choose a la carte or a series of tasters. Dishes change monthly and may include deceptively simple descriptions like starter of lasagne of anchovies, main course of sole with pil-pil sauce and trout eggs, and home made dessert of cinnamon and rice puff-pastry with milk, though you���d be mad to miss the little chocolate bombs. There are many food experiences which leave you both satisfied and smiling. We had the chef's menu. 10 small portions of the specialties of the chef. Everything was delicious, sometimes food came to fast. We asked to slow down and that was done. The restaurant is on the fourth floor of the Palacio Euskalduna, Bilbao's primary conference center. This restaurant caters mostly to businessmen needing a fine dining experience just close to the conference center itself. A good menu, the kitchen did not disappoint. We had chosen the chef's menu. This menu consists of 8 small (tapas) dishes which all were creative and delicious. We also ordered the wine tasting menu accompanying the dishes. Went there on a Wednesday evening in February with business partners, 5 people in total. The restaurant is very traditional looking inside and there is a great view over the river. This is one of the best restaurants I've been to, the service is amazing, the food was exceptional. we've tried Chef's menu and were very impressed. very creative dishes, tastes are amazing. Chef was very attentive, he came to serve us the last dessert, which was kinda cool show :) I would recommend this restaurant to all Bilbao visitors

We've eaten in a number of Michelin star restaurants and are often disappointed and in fact puzzled why they got the star.
