Light pours in everywhere. Innovation is on display in every mouthful that emerges from Canales��� kitchen. There���s no menu of the day; you choose a la carte or a series of tasters. Dishes change monthly and may include deceptively simple descriptions like starter of lasagne of anchovies, main course of sole with pil-pil sauce and trout eggs, and home made dessert of cinnamon and rice puff-pastry with milk, though you���d be mad to miss the little chocolate bombs. I went here for lunch yesterday, 12th feb. I was the only diner so the service was very attentive but the waiter was very enthusiastic about the dishes explaining the components and cooking style. The degustation menu is just delightful. Full of surpises and flavours. I value creativity in a restaurant. Great wine selection and also very good service.

If this restaurant was anywhere else but bizkaia it would have atleast two Michelin stars. It really is that good. Unfortunately for Etxanobe the Basque country is filled with excellent restaurants. I was fortunate enough to work in the Etxanobe kitchen for a week as a guest chef. Therefore my experience is from the "other side of the kitchen door". To celebrate our 40th birthdays, my friend and I decided to treat ourselves to the "Menú del Chef". Fantastic presentation and delicious taste. We highly appreciated that the kind and humble chef, Fernando Canales, came to our table several times and served the dessert himself. All-in-all a memorable experience!
