Comme son Directeur, Philippe Morel, aime tant l’expliquer, l’Absinthe est un bistrot de cuisiniers, résolument moderne, dans lequel la carte des mets est réfléchie, testée et finalisée par le Chef Damien Laporte et sa brigade. De la découpe des légumes à l’assaisonnement des sauces en passant par la levée des filets des poissons, les plats y sont chaque jour élaborés de A à Z, dans un esprit de créativité toujours renouvelée, au rythme des saisons et au gré des voyages des uns et des autres. Côté Déco, l’Absinthe oscille entre le loft new-yorkais et le bistrot typiquement parisien. Elle mêle des matériaux bruts tels que le métal vieilli, le béton, le bois et les briques à des objets du siècle dernier chinés dans des brocantes. Dès les beaux jours, les clients peuvent également profiter des rayons de soleil sur la terrasse de la place piétonne du Marché Saint Honoré.

Three of us, including one very fussy eater, enjoyed a delicious meal from an interesting, varied menu. The menu is not very long but incudes dishes of most of the popular meats and at least one fish, plus unusually for many French restaurants a creative vegetarian dish. Visited this cozy, friendly spot for lunch on a rainy weekday, and were really happy we did. Rostag does a fine job of blending classics with new ideas. I ate dinner here, tucking inside to get away from the rain. Great food at a reasonable (though not exceptional) price. I had the buckwheat duck tacos as a starter, a little odd but very tasty. For mains I had scallops, and for dessert cream puffs. All told, a lovely meal.

We just returned from a wonderful evening at the L'Absinthe! The buckwheat tacos were amazing, but the Spanish Pork was really special. It seemed like mostly locals, but there was an English menu, and the waiter spoke great English. Highly recommend.

Both indoor and outdoor dining. Fixed price menu with a few add on options. Several exotic starters (I had the buckwheat tacos with duck which were very small tacos indeed but quite tasty). The rib eye was really good. The best steak I've had in Paris. Service was good and English-friendly.

Wonderful meal! Just about every table was in service. A mix of locals and tourists. Delightful wait-staff. Delicious food. Good wine choices - a bit expensive (it is Paris and it was French wine)...

went with a group of both locals and tourists. Food was beautiful service excellent . Lovely and cosy inside on a cold evening.

We visited here for diner and the food was great! Get the seafood options and you won’t be desapointed! The waiter was very friendly and speaks great english.
